Although synonymous with Valentine’s Day, chocolate alone possesses an alluring mystical quality that enchants us all 24/7.

Its allure has been around for 2,000 years or more. In fact, many centuries ago, cacao beans—from which chocolate is originally derived—were considered so valuable that they were used as a kind of currency.

Now we know that chocolate is actually good for you and especially good for your heart.

Cocoa is a rich source of heart-protective anti-inflammatory compounds called flavonoids. The special type of flavonoids in cocoa are called flavanols. They are superb at preventing fatty substances from turning into plaque in the arteries. They also modulate nitric oxide so crucial to lowering blood pressure and improving insulin sensitivity.

    I am intolerant of whey (all dairy), so could you tell me how (where) I can get 70-80% cocoa to make smoothies and other deserts…. Thank You marie

    Hi Marie: You can get a 100% organic cocoa powder at your local health food store which would contain 100% cocoa. The 70-80% figure relates to the cocoa content in chocolate bars.

    In your Fat Flush plan you recommend limiting chocolate intake to twice a week. I like to have a tablespoon or 2 every day of raw cacao or bittersweet organic chocolate. I jokingly call it my medicine. Would you please explain why it’s better to limit it to twice a week. Thank you so much. Fat Flush has transformed my diet.

    Dear Maria: Thank you for your question. I limit chocolate intake on the Fat Flush Plan due to its high copper content which can raise estrogen levels in sensitive women. Since hormonal balance is one of the main targets of the program, I have found a number of women over the years who are “copper toxic” and therefore benefit from reducing all sources of dietary copper including chocolate, tea, and soy products.
